When it comes to the fall, I am here for all things pumpkin related. I have been this way my entire life and my parents would always send me a box of pumpkin scented/flavored goodies every single year in college and when I first moved to NYC. Needless to say, when September hits I start looking up all the pumpkin recipes, some oldie but goodies and some new ones too, which is where this healthy pumpkin pie pudding comes into play.
I shared yesterday on Stories over on Instagram, but wanted a home base for it as well where you could easily Pin it and come back to. This recipe turned out amazing and was super simple. It tasted like you were bitting into the middle of a pumpkin pie. Both Matt and Logan gave it a big thumbs up so I will be making it throughout the season!
My plan is to continue to test out and share new and easy fall recipes for you guys, also will re-link my blog post to my mom’s apple crisp recipe, it is the BEST THING EVER. It does involve a bit more time due to peeling and slicing all the apples, but let me tell you it is worth it.
