I wanted to post a recipe that I love to make as the weather begins to turn and heavier meals start to replace the summer salad. Growing up, I remember always taking family trips to IKEA to stock up on special Swedish treats for the holidays (yes, I am part Swedish). While there, we would indulge in their famous Swedish meatballs and leave with a full shopping cart and belly. When first moving to NYC I took my boyfriend on the South Street Seaport water taxi to IKEA to look at furniture, but more importantly to try their meatballs for the first time ever…where has he been living all these years?! With no surprise, he was sold. Since I am very adamant about healthy/clean eating I knew I needed to attempt to make these at home. After stealing a sneak peek of my grandma’s recipe, I added a few of my own touches which you will find below.
Every meatball needs some mashed potatoes, so I adapted a healthy recipe from Skinnytaste and changed a few things to my liking.
