Over the past few months I have been loving spending time in the kitchen and coming up with new things for Logan and us to try. It is also a win/win when I can make a big batch of something and stick a bunch in the freezer for easy meals/snacks. I decided to try out these steel-cut oatmeal blueberry muffins (no sugar) and made them mini size (used this mini cookie scoop which worked perfect).
Logan has been loving them, my favorite way to prepare them is to cut them in half, add a tiny bit of butter and quickly fry in a pan until brown and crispy on the inside. This is something my mom did for us growing up and is such a game changer. Hope you enjoy these healthier muffins as much as us!
