These gingerbread graham crackers are perfect for a fun holiday treat or year round! They turned out perfect and were super easy to make. Another simple recipe you can get kids involved with, especially with cutting out their shapes. I used mini cookie cutters (more here) so they were a more kid-friendly size, but you can use anything!
You will want to make sure you refrigerate the dough for at least 30 minutes before rolling out and cutting. I also ended up baking them for 14 minutes and for the mini size that was perfect.
Keep in mind you ca easily freeze these cookies too! This made a big batch, especially since smaller in size, so I left some out in a sealed container and placed the others in a freezer bag and froze. Let me know if you make them and what you all think!
