Black Bean Brownies

After all the positive feedback from my Chickpea Chocolate Chip Cookies post, I couldn’t wait to share the black bean brownies with you all! Another healthier alternative for any and all sweet tooth you may have. Similar to the cookies, when I first made these a few years ago I didn’t tell what exactly what they were until after he finished…and asked for another. Needless to say, they were a hit! Over the years I have played around with adding other ingredients at times to change of the flavors, which I will list out at “optional” below.

INGREDIENTS:

  • 15oz can of black beans, drained + rinsed well
  • 2 tablespoons cocoa powder
  • 1/2 cup quick cook oats
  • 1/4 teaspoon salt
  • 1/3 cup pure maple syrup (or honey)
  • 2 tablespoons sugar
  • 1/4 cup coconut oil (or canola oil)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoons baking powder
  • 1/4 cup shredded, unsweetened coconut (optional)
  • Splash of peppermint extract (optional – I love a chocolate mint flavor)
  • 1/2 – 2/3 cups chocolate chips (I prefer dark, but you can use any type)

DIRECTIONS:

Preheat oven to 350 degrees

Add all ingredients into a food processor EXCEPT the chocolate chips

Pulse until smooth

Stir in the chocolate chips

Pour into a greased 8×8 baking dish

Add extra chocolate chips on top if desired (no brainer for me!)

Bake for 17 minutes

Let cool for 10 minutes and enjoy!
