With football season in full swing, I know how easy it is to let go of your healthy eating and indulge in all the decedent football treats. Our friends enjoy getting together to watch the games at one of our apartments and we all contribute something to the football feast. I recently set out to try a healthier spin on nachos and the outcome won my boyfriend and puppy’s approval….so bring on all the football parties and skinny jeans!
Sweet Potato BBQ Chicken Nachos
(This recipe serves 1 to 2 people, but just add more of each ingredient to feed a larger crowd)
Ingredients
Sweet Potato Chips:
1-2 sweet potatoes (the rounder the better), washed and scrubbed
Place chicken breasts and enough BBQ sauce to cover the chicken in a crock pot and cook on low for 5-6hr. Once cooked, pull out and shred with two forks then place back in crock pot to soak of the rest of the sauce.
2 chicken breasts
BBQ Sauce
Guacamole:
1/2 an avocado
1T Greek yogurt
1/4T onion powder
1t crushed garlic
Other:
Cheddar cheese
Greek Yogurt (as sour cream)
Directions:
Preheat oven to 400 degrees
Slice the sweet potato(s) about 1/8 of an inch thick, discard the ends
Spray baking sheet with olive oil
Lay slices down and coat the tops with olive oil
Sprinkle salt over the top
Place in the oven for 20-24 minutes
*Make sure to flip the slices over halfway through cooking
While the sweet potatoes are cooking, make the guacamole
Mash all ingredients above together with a fork and set aside
Set cooked BBQ chicken in a bowl and grate cheese (or use shredded if desired)
When the sweet potato child are done, allow to cool for 5 minutes
Place on a plate as your bottom layer
Top the sweet potato chips with the BBQ chicken and cheese
Stick back in the oven while it is still warm to melt the cheese (about 2 minutes)
When the cheese is melted, top with guacamole and I use extra Greek yogurt as a sour cream substitute
There you have it, your not so naughty nachos…football party friendly and boyfriend and puppy approved, enjoy!
